"Pick-ando's opens its doors on June 1, 2022 as the Broye region's first Mexican restaurant. It is run by José Salvador Campuzano Rosales, a trained chef and restaurateur from Puebla, Mexico.

Mexican cuisine (not to be confused with indigenous cuisines) is considered highly varied, thanks to its pre-Hispanic (indigenous Mesoamerican) and European (mainly Spanish) heritage, a consequence of the Spanish conquest of the Aztec empire in the 16th century. It has also been influenced by African, Caribbean, Asian and Middle Eastern cuisines. The traditional basis of this cuisine is corn, along with other native foods such as beans, avocado, tomato, turkey, peanuts, vanilla and chili, accompanied by rice, transported by the Spanish...

Europeans brought with them a wide range of foods, the most important of which were meats from domesticated animals (beef, pork, chicken, goat and mutton), dairy products (especially cheese), and various herbs and spices.

Jose Salvador Campuzano regularly accompanied his grandmother to the weekly market as a child, and it was she who gave him his passion for discovering new ingredients and his fascination with constantly creating new combinations of flavors to please those around him in the kitchen.

For Jose Salvador, "pick-ando" is much more than just another step in his 25-year gastronomic career. It's his project at heart. After years of travels in France, Spain and Mexico, he has finally decided that Lucens and Romont are where he wants to settle.

He chose Lucens and Romont because he would like to promote his cultural heritage through his cuisine in the Broye and Glâne region.
